Sometimes its nice to get some quick dinner that’s healthy at the same time. I absolutely love this salad and my boyfriend liked it too
First i cooked 250g Quinoa. Double water and for 15 min. Then it need to cool down for a bit (If I was a bit more organised, I would have made them the day before)
Then one chopped avocado and one chopped mango and as much feta cheese you like
A bag of fresh spinach, all mixed together with some olive oil and balsamic. That’s it!!
